Chicken and waffle skewers

INGREDIENTS

For the Chicken:
1 box of Pinty’s Fried Chicken

For the Waffles:
300 g (2 cups) all-purpose flour
30 ml (2 tbsp) sugar
15 ml (1 tbsp) baking powder
2.5 ml (1/2 tsp) salt
2 eggs
375 ml (1 1/2 cups) milk
125 ml (1/2 cup) vegetable oil
5 ml (1 tsp) vanilla extract

For the Maple Sriracha Sauce:
125 ml (1/2 cup) maple syrup
30 ml (2 tbsp) ketchup
10 ml (2 tsp) or more sriracha
15 ml (1 tbsp) apple cider vinegar
5 ml (1 tsp) garlic powder

PREPARATION METHOD

  1. Prepare the Chicken:

    Cook the chicken according to the instructions on the box.

  2. Make the Waffles:

    In a large bowl, mix the flour, sugar, baking powder, and salt.
    In another bowl, beat the eggs with the milk, vegetable oil, and vanilla extract.

    Combine the wet and dry ingredients, stirring just enough to make the batter smooth.

    Heat the waffle iron according to the manufacturer’s instructions and lightly grease it with cooking spray.

    Once cooked, let the waffles cool slightly, then cut them into small pieces, about the size.

  3. Make the Sauce:

    Put the maple syrup, ketchup, sriracha, apple cider vinegar, and garlic powder in a saucepan.

    Heat over low heat to reduce the mixture until the sauce reaches the desired consistency.

  4. Assemble the Skewers:

    Thread the waffle and chicken pieces alternately onto skewers.

    Arrange the skewers on a serving platter and drizzle the sauce over the top.

INGREDIENTS

For the Nuggets:
1 package of Pinty’s Eatwell Chicken Nuggets

For the Nacho Toppings:
100 g (1 cup) shredded Tex-Mex cheese blend
125 ml (1/2 cup) cherry tomatoes, quartered
60 ml (1/4 cup) red onion, finely chopped
1 jalapeño, sliced (adjust to your tolerance)

For Serving:
1 avocado, sliced
60 ml (1/4 cup) fresh cilantro, chopped
125 ml (1/2 cup) sour cream
250 ml (1 cup) salsa of your choice
1 lime, cut into wedges

PREPARATION METHOD:

  1. Prepare the Nuggets:
    Cook the Pinty’s chicken nuggets according to the instructions on the package.
  2. Preheat the Oven:
    Place the oven rack in the center position. Preheat the oven to 200°C (400°F).
  3. Assemble the Nachos:
    Arrange the cooked chicken nuggets on a baking sheet and top with the tomatoes, onion, jalapeño, and cheese.
  4. Bake:
    Bake until the cheese is melted and slightly golden, about 7 to 10 minutes.
  5. Finish and Serve:
    Add a dollop of sour cream on top, garnish with fresh cilantro, and serve immediately with the avocado and salsa on the side to keep the nachos crispy.
